How to Freeze Garlic
You can freeze garlic for future cooking, but do not freeze garlic intended for planting. Freezing slightly alters the texture, but it works perfectly for culinary uses such as soups, sauces, stir-fries, roasting, baking, or blending.
Freezing Whole Cloves
There are two main ways to freeze whole cloves. You can separate the cloves from the bulb-keeping the papery skin intact-and place them in an airtight bag or container.
Alternatively, you can peel and trim the cloves before placing them in a freezer-safe container.
Usage: Thaw the cloves for 2–3 minutes before cooking. Thawed cloves become softer and have a different texture than fresh ones. Note that freezing causes some loss of flavor, so you may want to use a larger quantity. Frozen or thawed cloves are best cooked rather than eaten raw.
Freezing Minced Garlic
Mince the cloves to your desired size using a garlic press or food processor. Scoop the minced garlic into an ice cube tray, or spoon small mounds onto a baking sheet lined with parchment paper. Freeze until completely solid.
